End of Summer Treats

The end of the summer is fast approaching! That can be hard for everyone…getting the kids back in school, no more beach days or hanging by the pool. But, we have some time left, so we should make the most of it!

This is the time of year to really enjoy vegetables! July and August are prime harvest months for the most delicious veggies, especially oh-so-delicious Silver Queen corn and Better Boy tomatoes. Make it a fun outing to your local farmer’s market!

I also have included my favorite Sparkling Sangria Recipe…keep it in the fridge ready for impromptu guests! A refreshing alternative to the heavier red or white sangrias.

LOLITA’S SPARKLING SANGRIA

  • 2 cups well chilled seltzer or sparkling mineral water
  • 1 cup well chilled peach brandy
  • ¼ cup Agave syrup
  • 2 (750-ml) bottles well chilled Sparkling Rose’ (preferably buttery and dry), Spanish Cava, or Prosecco
  • ¼ cup Rose’s Lime Juice
  • About 4 cups assorted berries, such as blueberries, blackberries, and raspberries, rinsed and drained, for serving, and sliced peaches.

DIRECTIONS

Stir the seltzer, brandy, and and all other ingredients in a large bowl or pitcher. I prefer to marinate the Sangria overnight as it will absorb the fruit flavors, but it’s still okay to make a couple of hours ahead. Float about half the berries and peaches in the sangria and use the rest to decorate individual glasses.
